Are you ready for back to school? Me either! I mean, didn’t summer just start? Well…we might as well make the back to school process fun! These cookies are sure to put a smile on your little ones faces as they step into the new school year. Not to mention they’re super duper easy!
Let’s get started by gathering our ingredients!
Pencil Cookie Ingredients:
- Vanilla Wafer Cookies
- Vanilla Candy Coating
- Mini Chocolate Chips
- Pink Food coloring
Step One:
Using a knife, carefully cut the top side corners of the wafer cookie diagonally. This will make a sharp “pencil like” pointed tip.
Step Two:
Start by melting your white chocolate into two separate bowls. I recommend using glass microwave safe bowls. Melt in 30 second increments, stirring each time.
This is truly a measure with your heart kind of recipes, and it really all depends on how many cookies you want to make.
I used about two white chocolate blocks for the white chocolate and two for the pink chocolate. This amount of chocolate allowed for making the whole bag of wafer cookies.
Once you have your white chocolate melted into two bowls, go ahead and add a couple drops of pink food coloring to one of the bowls of white chocolate and mix with a spoon until you get your desired color of pink.
Step 3:
Next, dip the square side of the wafer cookie into the pink chocolate about an inch or so. This will create your “eraser”.
Then, dip the pointed side into the white chocolate. Thus creating the top of your pencil.
Step Four:
Take one mini chocolate chip and carefully place at the very top of the point, creating the tip/pencil lead effect on your cookie.
Storage:
Once your cookie is complete, I recommend putting them on a tray lined with wax paper or parchment paper. Then put the tray into the refrigerator or freezer so the chocolate can set. About twenty minutes should do the trick.
Once the chocolate sets, you can remove from tray and store in a ziploc tight bag. I recommend keeping them in the fridge or freezer to keep the chocolate from melting.
